A few words about our precious peas... Our wonderful peas in a classic recipe favored across all of Greece. In Kefalonia, it's one of the most renowned varieties throughout the country, as well as in mainland Greece, especially in the region of Lokrida. First of all, let's clarify that peas are not vegetables but legumes, although they have fewer proteins than all other legumes. We could practically categorize peas and corn separately, as well as beans, in the category of starchy vegetables, because they have the most carbohydrates of all vegetables! Nutritious and healthy with B complex vitamins, vitamins K, C, A, folic acid, manganese, magnesium, potassium, zinc, phosphorus, and iron. It also contains dietary fibers, essential for good intestinal function and helps prevent diabetes, various forms of cancer, and heart diseases. However, it should be noted that if our peas are combined with protein (meat or mushrooms) like with rice or cereal products, it improves the biological value of the included protein.

What a wonderful soup!!! Especially if you make it with tomatoes from your garden and not a greenhouse... it fills the whole house with a lovely aroma. We always say that the ingredients make the taste, and the aroma of a dish. The tomato from the field that when cut fills your hands with its scent, the kitchen where it will be cooked, the Greek yogurt with its wonderful taste and velvety texture, all combine to make an amazing result. This soup can be eaten hot or cold! Imagine it during the summer months!!!

Here are the ingredients:

7-8 ripe organic tomatoes

500g Greek yogurt

1 chopped carrot

1 chopped garlic clove

1 chopped onion

1 chopped celery stalk

1 chopped leek (white part)

Greek salad

Exquisite, refreshing, tasty, simple – this countryside salad encompasses all of Greece in a single dish. Our ingredients are well-known, varying slightly from place to place and village to village, yet each location shares a common foundation while incorporating local produce.
Accepted even by dieticians as a complete meal, the countryside salad becomes a beloved dish for both adults and children alike. It stands as a quintessential symbol of Greece, alongside souvlaki and fasolada, recognized worldwide as the most photographed "Greek salad."
Rooted in the past, the origins of this salad trace back to times of austerity when Greeks, using a handkerchief tied at its four corners (referred to as a "disaki"), would pack 2 slices of bread, a tomato, a bit of cucumber, 3-5 olives, and a slice of onion. These items accompanied them to work, construction sites, or the countryside. Taverns of that era, modest and frugal, adopted these ingredients and with a touch of olive oil, created this salad. The more fortunate would add cheese (feta).
Every region, every corner of Greece has its own version of the countryside salad, utilizing ingredients in abundance. In Mani, they might add purslane; in Pelion, tsitsiravla; in Crete, barley rusks and a touch of wild chicory; in Macedonia, it might be embellished with eggs; and on the islands, marinated sardines could adorn it.
However we encounter it, in whatever variation, this salad will always remind us of Greece!

I love smelling tomatoes on the vine with their incredible aroma that we've almost forgotten. Of course, they're not perfectly round and shiny like store-bought ones - they have marks and irregular shapes. But their taste and aroma are amazing!
