Zucchini Blossom Stew

A traditional dish that I came across in Mani. Wonderful, flavorful, and yet forgotten, as it is now only made by our grandmothers. Now that it's their season, it's an opportunity for you to try and make such a delightful dish.


Our ingredients:
1 kg zucchini blossoms
4-5 small zucchinis, cut into slices
1 large onion, sliced
2 cloves of garlic, sliced
3-4 fresh spring onions, finely chopped
2-3 ripe tomatoes, grated
½ bunch of parsley, finely chopped
2 large potatoes, cut into chunks
2 carrots, sliced
Olive oil
Salt and pepper
Optional: 200g feta cheese

Beef Stew with Zucchini and Eggplant

Our ingredients are as follows:


700g beef shoulder, cut into pieces
 2 onions, finely chopped
 2 cloves of garlic
700g ripe tomatoes, crushed or 1 can of crushed tomatoes
1 tbsp tomato paste
4 flask-shaped eggplants
 5 zucchinis, cut into large pieces
1 tsp sugar
1/2 tsp cinnamon
4-5 whole allspice
2 bay leaves
1 chili pepper
1/2 wine glass of red wine
Olive oil
 Salt and pepper

Zucchini fritters

Zucchini fritters are delicious and crispy, infused with herbs and feta. A tasty option for appetizers or a light main dish.


Ingredients:
• 500g zucchini, grated
• 1/2 bunch dill, finely chopped
• 1/2 bunch parsley, finely chopped
• 1/3 bunch mint, finely chopped
• 4-5 fresh onions, finely chopped
• 1 dry onion, finely chopped
• 2 eggs
• 200g crumbled feta cheese
• 1/2 tsp baking powder
• 200g breadcrumbs
• Salt, pepper, olive oil, flour

 

Yogurt Dip:
• 200g yogurt
• Chopped dill
• 1 clove garlic, mashed
• Chopped mint
• 2 tbsp lemon juice
• 2 tbsp olive oil
• Salt, pepper
Mix all the ingredients and place in a bowl. This dip can accompany the fritters, breadsticks, vegetables, etc.

Stuffed Zucchini Blossoms

A morning coffee with my friend Stavroula in the village. The skilled old housewives create such delicious dishes with their artistry and mastery... Just like Stavroula, who gathered zucchini blossoms from the garden. There are quite a few, around a hundred. After washing and removing the pistils, she placed them in a container in a row to prepare the filling. She went to the garden, picked tomatoes, a bunch of fresh mint, and parsley. It's so beautiful to gather all the fresh, wonderful, and above all pure vegetables from the garden... We make coffee, and our creative magical cooking begins...


Ingredients:
• 100 zucchini blossoms
• 500g arborio rice
• 1 beefsteak tomato
• 5 medium ripe tomatoes
• 3 medium dry onions
• 5 zucchinis
• 1 bunch of finely chopped mint
• 1 bunch of finely chopped parsley
